Shredded Pancakes (Kaiserschmarrn) Recipe

Kaiserschmarrn was said to be a happy accident. Legend says that Emperor Franz Joseph I of Austria, expecting a refined dessert, was instead served this imperfect creation by a frazzled chef. To everyone’s surprise, the emperor cleaned his plate. The shredded mess was crowned a masterpiece, thus the name meaning “Emperor’s mess.”

What exactly is Kaiserschmarrn?

Like your typical pancakes, Kaiserschmarrn is not quite breakfast yet not quite dessert either. It lives somewhere in between. Simply put, it’s a much fluffier pancake torn apart with a spatula mid-cook. Once the butter browns the edges, it’s topped with a snowfall of sugar and a spoonful of tart plum compote.

Now whether to enjoy that as a breakfast, dessert, or even meal, is totally up to you!

Is Kaiserschmarrn healthy?

Unfortunately, this isn’t salad. Still, there's protein from the eggs, some calcium from the milk, and a bit of nutrition in the fruit compote (if you're generous with it). And mentally? It's hard to be sad with a bowl of warm Kaiserschmarrn in front of you. Mood-boosting counts for something. Ingredients

  • 1 cup flour
  • 1 cup Mlekovita UHT Full-Cream Milk
  • 4 large eggs
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 2 tbsp Maven unsalted butter
  • Powdered sugar for dusting
  • Optional: berry compote ow whipped cream for topping

Directions

  1. Combine flour, milk, eggs, sugar, and salt in a mixing bowl until the mixture is smooth and lump-free.
  2. Heat a large skillet over medium heat and melt a bit of butter.
  3. Pour the batter into the pan and cook until the bottom is golden. Flip to cook the other side.
  4. Tear the pancake into smaller pieces using a spatula and continue cooking until evenly browned.
  5. Serve warm with a sprinkle of powdered sugar, a spoonful of compote, and whipped cream.
